I prefer to scale all these items in grams for precision and keep separate the wet from dry ingredients. There are standard measures available below if you don’t have a scale. Best to invest and get a scale. Makes 2 medium loaves or 1 large loaf pan. Preheat oven to 325 degrees while you gather the ingredients.
Bowl of Dry Ingredients
Stir all of these ingredients together with a spoon
460 g all purpose Flour (3 cups)
2 g baking soda (1/2 tsp)
5 g baking powder (1 tsp)
6 g cinnamon (1 Tablespoon)
13 g salt (2 tsp)
Bowl of Wet Ingredients
stir all of these ingredients together with a whisk
3 eggs
85 g avocado oil (3/4 cup)
550 g banana, previously frozen (7 bananas) mashed with whisk
9 g vanilla extract (1/2 Tablespoon)
50 g whole milk (1/4 cup) goat milk a good substitute
270 g sugar (1.5 cup)
125 g toasted pecans (1 cup)
100 g chopped dates (1 cup)
Method:
Add the wet and dry ingredients together and combine with a spoon. Be cautious to not over stir, gently fold them all together into one mass. Mixer is not required. Line loaf pan with parchment paper and pour in batter. Bake at 325F degrees (163C) for 35-40 minutes or until wooden dowel comes out dry. For fun, add 100g of dark chocolate chips to the batter or make a toffee sauce. Enjoy with coffee or tea all day long.
